BARBECUE RECIPES
For some, the barbecue season has already begun. If you're planning a meal with friends, try these recipes! In addition, here are some tips on how to avoid mistakes and clean your grill better.
RECIPES
- Matambre al libro: Matambre is a piece of pork similar to a secret. The piece of meat is laid out on the table, fat side down; mozzarella cheese, roasted peppers, olives, onion, sundried tomatoes and fresh basil are placed on top. Fold the meat into a book and sew with thick thread. Grill the meat with a squeeze of lemon, salt and pepper.
- Roasted cucumberCucumber is perfect for a barbecue. To grill them, cut them into wedges (small cucumbers are best), season with salt and pepper and brush with oil before grilling for 45 seconds. To give them the vinegar touch of the gherkins, you can put them in a jar with white vinegar and spices, covered for an hour.
- Grilled lemonadeCut the lemons in half, sprinkle them with sugar and grill them for about 10 minutes until they start to caramelise. Then prepare the lemonade according to the usual recipe.
- Mango and prawn brochettePeel the mangoes and cut them into large cubes.
Put a saucepan on the heat. Add a quarter of the mango cubes and 1 dl of water and keep on a medium heat for 20 minutes. Remove and add a tablespoon of olive oil, a pinch of salt and pink pepper. Blend in a blender and set aside.
Next, wash and cut the pepper into squares. Peel the prawns, leaving the tails on, and brush with the mango sauce.
Assemble the skewers alternating mango, prawns, peppers and basil. Place a grill on the fire and grill the skewers.
Serve with the mango sauce. SOME TRICKS
- Avoid pricking the meat with the grill fork to turn it over. So that it does not lose its juices, let's use a pair of tweezers.
- Avoid serving meat on metal trays., because it makes the meat cool down quickly. The ideal is to serve the meat in small braziers so that it maintains its temperature, and if this is not possible, on wooden boards.
- To clean a barbecuewhile the embers are still hot, we pass a lemon, a potato or an onion cut in half and rub each of the bars. This way the food is carried away dragging the impurities that are on the grid.
